Salmon with ginger

4 thick Salmon filets or steaks

2 inch Fresh ginger; peeled & thinly sliced

4 medium Cloves of Garlic; thinly sliced

13 ounces Tomatoes; sliced

1 teaspoonCayenne; to taste

1 small Bell pepper; chopped

2 cups coconut milk (SCD legal)

1 pinchSea salt

1 largeLime; juice only (1/8 cup)

Place fish in an oven proof pan. 

Top with the other ingredients. 

Bake at 350F for around 30 minutes
